A good custard recipe is vanilla custard with raspberry mash. Make the custard with 2 cups of milk, 1/2 of a vanilla bean, 6 egg yolks, 2/3 cup of sugar and 1/4 cup of cornstarch. Make the raspberry mash topping with 1/4 pint of raspberries and 1 tablespoon of sugar.
Pour 2 cups of milk into a saucepan. Add the vanilla bean, and boil the mixture over medium heat. When it begins to boil, take it off the heat, and set it aside for 10 minutes. In a separate bowl, mix the 6 egg yolks, 2/3 cup of granulated sugar and 1/4 cup of cornstarch together until the mix is smooth. Pour the milk mixture into the bowl.
Use a strainer to pour the mixture into a saucepan. Cook it over medium-high heat until it boils and becomes thick. Take it off of the burner, and stir in 1 tablespoon of unsalted butter. Pour the custard into serving dishes, and set them in the refrigerator. Let the custard chill for at least two hours.
Put 1/4 of a raspberry pint into a bowl, and sprinkle 1 tablespoon of sugar on top. Mash the raspberries with a fork. Whip 1 cup of cream with 1 teaspoon of sugar until it forms a whipped texture. Serve the raspberry and whipped cream on top of the custard.
