A popular tomato, onion and cucumber salad recipe by Rachael Ray features red onion and red wine vinegar. A zesty cucumber salad recipe by Paula Deen makes use of Vidalia onion and white wine vinegar, while a quick pickled cucumber salad by Martha Stewart includes red onion and rice vinegar.
To prepare Rachael Ray's tomato, onion and cucumber salad, de-seed and slice 5 plum tomatoes. Peel and thinly slice 1/4 of a red onion, and cut 1 Kirby cucumber into thin half-moon pieces. Combine all the ingredients in a bowl, and stir in 2 tablespoons of extra-virgin olive oil and 2 splashes of red wine vinegar. Season the salad with salt and black pepper. Let the salad stand for 20 minutes, and toss the ingredients again just before serving.
To make Paula Deen's zesty cucumber salad, peel and thinly slice 3 cucumbers. Cut 10 ounces of grape tomatoes into halves, and thinly slice 1/2 of a Vidalia onion into half-moon shapes. Combine 3 tablespoons of white wine vinegar, 2 tablespoons of olive oil and 1 teaspoon of sugar in a bowl. Incorporate the cucumbers, tomatoes and onion. Add salt and black pepper to taste. Let the ingredients mingle for 20 minutes before serving the salad.
To make Martha Stewart's quick pickled cucumber salad, peel and thinly slice 2 large cucumbers and 1/2 of a red onion, and toss the vegetables with 1 teaspoon of sugar and 1/4 cup of rice vinegar. Mix in salt and pepper to taste.
