To make white bean and ham soup, place 2 meaty, smoked ham hocks, 1 pound of dried white beans, 2 quarts of low-sodium chicken broth, 4 chopped ribs of celery and 8 ounces of sliced carrots in a slow cooker. Add 1 large chopped onion, 1 halved head of garlic and 12 sprigs of thyme. Cover and cook on low heat for approximately 5 hours, or until the beans are tender.
Remove the thyme stems and the ham hocks carefully using tongs. Pull the meat from the ham hocks, shred and return it to the slow cooker.
