Add 1 quartered and sliced large onion, 1 peeled and diced large carrot and 3 sliced ribs celery to skillet. Cook until onions are lightly browned; transfer vegetables to slow cooker.

Bring 2 cups dry red wine and 2 cups chicken broth to boil in skillet. Boil until reduced by half, which takes about seven to nine minutes. Pour into slow cooker; add 1 large bay leaf and rosemary leaves, if desired. Cook, covered, on low for seven to nine hours.

For the latter recipe, heat 3 tablespoons olive oil over medium-high heat in large skillet. Toss 4 to 5 pounds meaty beef short ribs in a bag with 1/2 cup all-purpose flour, 1/2 teaspoon ground thyme, 1/2 teaspoon salt and 1/2 teaspoon ground black pepper. Brown short ribs on all sides in hot oil. Add 1 large coarsely chopped onion, and cook 2 minutes longer; add to slow cooker.
