A good Crock-Pot potato recipe is scalloped potatoes. To make Crock-Pot scalloped potatoes, layer thinly sliced potatoes and onions in your Crock-Pot. Whisk together a can of condensed cheddar soup, a soup can full of milk, 1/2 cup of grated Parmesan cheese, and salt and pepper to taste. Pour the mixture over the potatoes and onions. Cook on high for four to five hours.
For an easier cleanup, grease the Crock-Pot with a little vegetable oil before adding the potatoes and onions. To add a cheesy topping, sprinkle 4 ounces of shredded cheddar over the top of the potatoes when they are done cooking. Put the lid back on, and wait until the cheese is melted, about 5 minutes, before serving. Make this a complete meal by layering in some thinly sliced ham and carrots.
To make Crock-Pot mashed potatoes, fill your Crock-Pot 2/3 full of peeled, diced potatoes. Add 1/2 cup of water or broth. Cook on high for four to five hours. Add 1/2 cup of milk, 1/4 cup of butter, and salt and pepper to taste, Mash in the Crock-Pot with a potato masher until the potatoes are the desired consistency, adding more milk if necessary. Keep the mashed potatoes warm in the Crock-Pot until they are ready to serve.
