One easy and good Crock-Pot recipe uses 2 pounds of ground beef, two eggs, 2/3 cup milk, 3/4 dry breadcrumbs and a 1-ounce package of dry onion soup mix. Aluminum foil or a specialty Crock-Pot liner also helps for easy clean-up.
Line the Crock-Pot with the specialty Crock-Pot liner or simply line aluminum foil in the pot. Make sure the foil comes up several inches above the edge of the pot for easy removal.
Beat the eggs in a small bowl. In a large bowl, combine the beaten eggs, milk, breadcrumbs and soup mix. Mix well and then add the meat. Mix the meat with the breadcrumb mixture and then shape into a rectangle with your hands. Make sure the formed loaf is small enough that it won't touch the sides of the Crock-Pot. Put the lid on the pot and cook on low for six hours or on high for three hours.
When the meatloaf is finished, pull the liner or aluminum foil out of the Crock-Pot, slice and serve. This recipe serves six people.
You can also cook a side of potatoes right in the pot for a complete meal. Simply cube three yellow potatoes and place in the bottom of the pot before adding the meatloaf.
