Fresh cranberry relish, cranberry jalapeño relish and fresh cranberry orange relish are some good cranberry relish recipes. Tyler Florence, Emeril Lagasse and Ocean Spray are the creators behind these recipes, respectively.
For the fresh cranberry relish, place 2 pounds of fresh cranberries, 1 cup of sugar, 1/4 cup of Grand Marnier liqueur and 1 zested and juiced orange in a food processor. Pulse several times to break down the cranberries, and blend all the ingredients. Leave the mixture a bit chunky ,and let it sit at room temperature for at least 30 minutes before serving.
For the cranberry jalapeño relish, peel, section and roughly chop 2 medium oranges. Place half the oranges, 1 1/2 teaspoons finely grated orange zest and 2 seeded and chopped jalapeño peppers in a food processor. Pulse until finely chopped. Add 1 cup of sugar, and pulse about three more times.
Add 1 pound of cranberries, and pulse until the cranberries are roughly chopped. Transfer to a bowl, and toss with the remaining oranges and 1 tablespoon of chopped mint leaves. Allow the relish to chill for at least 30 minutes before serving.
For the fresh cranberry orange relish, place 6 ounces of cranberries and 1/2 seeded orange into a food processor. Pulse until the mixture is evenly chopped, then transfer to a bowl. Repeat with the same amount of ingredients, and transfer that second half to the bowl. Stir in about 1 cup sugar, and store in a refrigerator or freezer.
