Two highly rated cranberry gelatin salad recipes are AllRecipes.com's Cranberry Jell-O Salad and Kraft's Festive Jell-O Cranberry-Pineapple Salad. The Kraft recipe uses store-bought cranberry sauce and strawberry flavored gelatin, while the AllRecipes.com salad uses fresh cranberries and cranberry flavored gelatin.
To make the Festive Jell-O Cranberry-Pineapple Salad, start by draining a 20-ounce can of crushed pineapple, making sure to save the juice and to set aside a tablespoon of pineapple. Add cold water to the pineapple juice to get 3 cups of total liquid. Bring the juice and water mixture to a boil in a saucepan, and then mix with two 3-ounce packages of strawberry gelatin. Add in a 16-ounce can of whole cranberry sauce and refrigerate the gelatin mixture for 1 1/2 to two hours.
After removing from the refrigerator, stir in the pineapple, a chopped pear and 2/3 cup chopped walnuts. Put the salad back in the refrigerator for four more hours. Top with the tablespoon of reserved pineapple and a sliced pear before serving. The strawberry gelatin can be replaced with a sugar-free variety or cranberry flavored gelatin.
To make the salad into a molded form, use a 6-cup mold instead of a serving bowl, and substitute a 8 1/4-ounce can of crushed pineapple, 1/3 cup chopped walnuts and 2 cups of pineapple juice and water.
