To make "World's Best Cornbread Stuffing," first remove the casings from 2 hot Italian sausages, heat 1 tablespoon of olive oil in a skillet over medium-high heat, add the sausage meat and cook until browned. Set the cooked sausage to drain on a plate lined with a paper towel.
Meanwhile, heat another tablespoon of oil over medium-high heat in the skillet, and add 1 cup each of chopped carrot, celery and onion. Season with salt and pepper to taste, add 1/2 cup of chopped fresh sage leaves, and cook until the vegetables are tender, typically about 10 minutes.
Next, crumble 4 large corn muffins into a bowl, add the sausage and vegetables, 3 large eggs and 1/4 cup of chicken broth. Mix with hands until the ingredients are sufficiently incorporated. Add more chicken broth if the mixture seems too dry.
