To make the apple sandwiches, core 1 Granny Smith apple into 10 rings, each about 1 inch thick. Spread 2 tablespoons peanut butter onto half of the apple rings and sprinkle each with 1 tablespoon granola and a few raisins. Cover each with another apple ring to form sandwiches.
To make garlic-rubbed toast with fresh tomatoes and basil, lay 4 slices coarse country bread on a rack 8 inches above a fire and toast, turning once, for four minutes or until crisp and golden. Alternatively, toast the bread in a toaster.
Rub a whole garlic clove over one side of the bread. Core 1 large salad tomato and slice about 1/4 inch thick, and then tear 16 large basil leaves into pieces while leaving the smaller leaves whole. Alternatively, halve 16 cherry tomatoes.
Divide the bread slices with the garlic side up between two plates. Arrange the tomatoes in a single layer on the bread and sprinkle with salt. Drizzle with 2 to 4 tablespoons extra-virgin olive oil. Distribute the basil evenly and serve immediately.Learn more about Cooking
