To make coffee can bread, mix ingredients such as yeast, warm water and flour into greased 1-pound coffee cans. Let the batter rise, and then bake in an oven at 350 degrees Fahrenheit. The recipe yields two loaves.
To prepare the recipe, mix 1 1/4-ounce package of dry yeast with 1 tablespoon of sugar and 1/2 cup of water in a small bowl. Cover the bowl with a towel, and let it stand for around 15 minutes to activate the yeast.
Meanwhile, mix 1 12-ounce can of evaporated milk with 1 1/2 teaspoons of salt, 3 tablespoons of sugar and 2 tablespoons of cooking oil. Mix well, and then add 4 1/2 cups of flour and the yeast mixture.
Prepare two clean 1-pound coffee cans by greasing them with oil. Place the plastic lids on the cans, and allow the dough to rise inside until the lids pop off. Remove the lids, and position the cans upright in an oven heated to 350 F. Bake the loaves for 35 minutes or until they reach the desired brownness level.
As an alternative, make coffee can pumpkin bread by combining 2 cups of sugar, 1/2 cup of oil, 2 1/2 cups of flour and 2 cups of canned pumpkin. Add 1 teaspoon of cinnamon, 2 teaspoons of baking soda, 1/2 teaspoon of salt and 1 teaspoon of vanilla. Also add 1 egg, 1 cup of nuts and 1/2 cup of raisins. Pour the batter into the coffee cans, and bake for one hour at 350 F.
