To make cinnamon-roasted apples, spread pecans in a baking dish, and bake them for three to five minutes at 450 degrees Fahrenheit. Remove and set aside the pecans. Combine 1/4 cup of light-brown sugar with 2 tablespoons of lemon juice and 1/4 cup of water. Halve 4 Gala apples, one at a time, and immediately toss each one in the sugar mixture.
Place the apples cut-side down in a baking dish, and pour the sugar mixture on top. Add in 4 cinnamon sticks, cover with aluminum foil, and bake for 15 to 20 minutes at 450 degrees Fahrenheit. Serve the apples with vanilla ice cream, pan juices and pecans.
To make glazed cinnamon apples, peel and cut 6 large tart apples into eight wedges each. Transfer the wedges to a slow cooker, and drizzle them with 2 tablespoons of lemon juice. Mix 1/2 cup of brown sugar with 1/2 cup of white sugar, 2 tablespoons of flour, 1 teaspoon of cinnamon and 1/4 teaspoon of nutmeg.
