Prepare Guy Fieri's Spicy Chickpea Salad by combining 1 clove of minced garlic, 1 seeded and diced serrano pepper, 1/2 diced small red onion, 3 tablespoons of red wine vinegar and 1/4 cup olive oil in a large bowl. Salt and pepper to taste and then add one 15 1/2-ounce can of drained and rinsed chickpeas, 1/2 pint of halved cherry tomatoes, 1/2 bunch of coarsely chopped mint and 1/2 bunch of cilantro, also coarsely chopped. Season once again with salt and pepper and toss the mixture with a shredded head of butter lettuce.
Rachael Ray's Chickpea Salad requires 2 15-ounce cans of chickpeas rinsed and drained. Combine with 1 small chopped red onion, 1 small chopped red bell pepper, chopped celery ribs and leafy tops, 1 clove minced garlic paste, and 2 tablespoons of finely chopped rosemary. Add 1/2 teaspoon of crushed red pepper flakes and set the mixture aside. Prepare a simple dressing with 2 tablespoons of red wine vinegar, 3 tablespoons of extra-virgin olive oil, and freshly ground salt and pepper to taste. Distribute the dressing throughout the chickpea salad and toss well before serving.
