To make chicken amandine, saute 1/4 cup of chopped onion in 1 tablespoon of butter until tender. Add 6 ounces of long grain and wild rice with the seasoning packet and 2 1/4 cups of chicken broth, and bring to a boil. Cover and simmer for 25 minutes.
Combine 3 cups of cubed and cooked chicken with 2 cups of green beans, 10 3/4 ounces of condensed cream of chicken soup, 1/2 cup of sliced almonds, 4 ounces of diced pimentos, 1 teaspoon of pepper and 1/2 teaspoon of garlic powder. Stir in the rice and transfer to a greased baking dish. Sprinkle with crumbled bacon from 1 bacon strip and 1/4 cup of sliced almonds. Bake at 350 degrees Fahrenheit for 30 to 35 minutes.
To make bruschetta stuffed chicken breasts, combine 1 can of diced tomatoes, 1/2 cup of shredded mozzarella cheese and 1/4 cup of chopped basil. Stir in 6 ounces of stuffing mix. Pound 2 pounds of chicken breasts to 1/4-inch thickness and cover them with stuffing. Roll the breasts up and place them seam sides down in a baking dish.
Drizzle with 1/3 cup of roasted red pepper dressing and bake for 40 minutes at 350 degrees Fahrenheit. Top with 1 cup of shredded mozzarella cheese and bake for five more minutes.Learn more about Cooking
