A good recipe using chicken and Hidden Valley Ranch dressing combines fresh dressing, bread crumbs and chicken. The coated chicken is baked in the oven for 20 to 25 minutes or until the chicken is fully cooked and juices run clear.
Preheat the oven to 400 degrees Fahrenheit. In a mixing bowl, make fresh dressing by blending together 1 cup of mayonnaise and 1 1-ounce packet of Hidden Valley Ranch dressing and seasoning mix. Stir until well mixed.
Place 3/4 cup of unseasoned dry bread crumbs on a plate or in a shallow bowl. Take 4 boneless and skinless chicken breast halves, and dip them into the dressing mixture. Coat each piece of chicken well, and shake off any excess dressing. Roll each piece of coated chicken in the bread crumbs until the chicken is well coated. Place the chicken in a baking pan or on a parchment-lined baking sheet. Bake uncovered in the oven for 20 to 25 minutes or until the internal temperature of the chicken reaches 165 degrees Fahrenheit.
A similar recipe omits the mayonnaise and combines the dressing mix with the bread crumbs in a resealable plastic bag. The chicken is placed in the bag and shaken to coat before being placed in a baking dish and baked.
