Cheesy Potato Casserole

- Butter, room temperature
- 1 shallot, minced
- 2 cups heavy cream
- 1 clove garlic
- Kosher salt
- Freshly ground black pepper
- 3 medium russet potatoes, peeled and sliced to 1/8-inch thickness
- 2 cups grated sharp white Cheddar cheese
- 1/4 cup grated Parmesan cheese
- Prepare baking dish
- Make sauce
- Assemble the casserole
Heat the oven to 375 degrees Fahrenheit and butter a baking dish. Sprinkle into it a little of the shallot.
Simmer the heavy cream in a saucepan on medium heat with the rest of the shallot, the garlic, salt and black pepper. Stir for up to 3 minutes, or until the sauce thickens.
Layer a third of the potatoes in the baking dish and follow with a layer of the grated cheeses. Repeat twice, keeping some cheese for the topping. Pour the sauce onto the potatoes and top with remaining cheese.
Cover the baking dish with foil and place into the oven for 1 hour. Remove the foil and bake for a further 15 or so minutes until the cheese has browned. Remove from the oven and let the casserole stand for 10 minutes before serving.
