One of the features that makes Charbroil's infrared grill stand out from other models is the lack of flare-ups, allowing you to grill bacon for flavorful dishes such as bacon-wrapped grilled shrimp and grilled bacon brownie cupcakes. For both recipes, start by cooking the bacon right on the grates of the infrared grill for three to four minutes on high if you want to keep the bacon flexible or until the bacon is crispy.
To make bacon-wrapped grilled shrimp, cook the bacon just long enough to render some of the fat without compromising the flexibility needed to wrap the shrimp. Dust 1 pound of peeled and deveined shrimp with a dry spice rub, wrap each shrimp in bacon, and thread them onto a metal skewer, alternating the shrimp with pineapple chunks. Grill the shrimp for several minutes on either side, until the shrimp is opaque and lightly charred.
For the savory-sweet brownie cupcakes, grill the bacon until it's crisp. Set it aside to cool and crumble. In the meantime, reduce the heat of the grill to medium-low and prepare the brownie batter according to the instructions on the box of brownie mix before stirring in the crumbled bacon. Pour the batter into a greased cupcake pan and grill the cupcake brownies for approximately 20 minutes. Rotate the pan, close the lid and grill the cupcakes for another 20 minutes, or until a knife inserted in the center comes out clean.
