To make the tea concentrate, add 2 cups water, 2 whole cloves, 1 teaspoon ground cinnamon, 1/2 teaspoon ground ginger, 1/2 teaspoon cardamom, 1/2 teaspoon ground nutmeg and 1/8 teaspoon ground allspice to a saucepan, and bring it to a boil. Steep for five minutes, then strain the tea through a fine sieve, and store the concentrate in the fridge for up two weeks.
