Kraft Recipes offers a mixed vegetable casserole recipe that calls for frozen mixed vegetables, Ritz crackers, cheddar cheese and water chestnuts. The recipe takes 45 minutes to prepare and makes eight 1/2-cup servings. Taste of Home also offers a mixed vegetable casserole that serves eight people.
To prepare the casserole, heat an oven to 350 degrees Fahrenheit. In a bowl, mix 12 crushed Ritz crackers with 1 tablespoon melted margarine or butter. In a 1-quart casserole dish, combine 1 16-ounce package of frozen, thawed and drained mixed vegetables containing broccoli, carrots and red pepper with 1 8-ounce can of drained sliced water chestnuts.
Add 1/2 cup each salad dressing and shredded mild cheddar cheese and 1/3 cup chopped onions to the vegetable mixture. Combine well, and then top with the cracker crumb mixture. Bake the casserole for 35 minutes.
To make Taste of Home’s vegetable casserole, combine 1 16-ounce packaged of frozen thawed mixed vegetables with 1 large chopped onion and 3 chopped celery ribs. Add 4 ounces of shredded cheddar cheese and 1 cup of mayonnaise. Spoon the vegetable mixture into a 1 1/2-quart baking dish. In a bowl, combine 3/4 cup of crushed butter-flavored crackers with 1/4 cup melted butter. Sprinkle the cracker mixture on top of the vegetables. Bake the casserole uncovered at 350 degrees Fahrenheit for 30 to 35 minutes.
