The ingredients include 2 cups of unbleached all purpose flour, 2 teaspoons of baking powder, 3/4 teaspoon of salt, 2 tablespoons of cold unsalted butter cut into 1/2-inch cubes and 3/4 cup of lukewarm water. To make county fair fried dough, mix together the flour, baking powder and salt. Use a pastry blender or mixer to incorporate the butter into the flour mixture. Mix in the warm water to form a soft dough, cover the dough, and allow it to rest for 15 minutes.
After the dough rests, divide it into eight equal pieces. Roll each piece into a disc that is about 5 inches in diameter and 3/8-inch thick. In a frying pan, heat 3/8-inch of vegetable oil to 375 F.
