Carlsbad Cravings, Pati's Mexican Table and Our Best Bites all offer good recipes for caramelized pecans. All these recipes are compatible with pecans as well as other types of nuts.
To make Carlsbad Cravings' five-minute caramelized nuts, heat a medium non-stick skillet and add 1 cup pecans, 1/4 cup sugar and 1 tablespoon butter. Season with 1/4 teaspoon cinnamon if desired. Stir constantly for about five minutes or until the nuts are evenly coated in the melted butter and sugar mixture. Pour the coated nuts onto a baking sheet lined with parchment to cool. Separate the nuts with a fork while they are still warm, or allow the nuts to cool into clusters.
For Pati's Mexican Table's caramelized pecans, add 1 cup sugar, 1/4 cup water, 1 teaspoon vanilla extract and 2 cups pecans to a saucepan over medium heat. Stir occasionally with a spatula or wooden spoon. Once the sugar begins to melt, stir continuously to ensure the nuts do not burn. Cook for about 10 minutes more, or until the mixture is the consistency of thick caramel. Pour the mixture onto a parchment-lined baking sheet to cool.
Our Best Bites recommends a similar stove top method for caramelizing pecans, but calls for brown sugar and light corn syrup rather than white sugar.
