A good caramel apple pie recipe comes from Food Network. It was the first place winner on the "Food Network Challenge" episode titled "The Great American Pie Cook-Off."
Start with the crust, and chill all ingredients before mixing. Combine 3 cups of flour and a teaspoon each of salt and sugar. Cut in 1 cup plus 1 tablespoon of butter flavored shortening. In another bowl mix 1/3 cup of ice water, 1 tablespoon of vinegar and 1 egg before combining both.
For the filling, preheat the oven to 450 F, and start peeling and slicing 6 cups of apples, and then sprinkle with lemon juice. Combine 1/2 cup each of white and brown sugar, 1/4 cup of flour, 1 teaspoon of cinnamon and 1/4 teaspoon each of nutmeg and salt. Add the apples to this bowl and mix well before adding 1 teaspoon of vanilla and 4 tablespoons of heavy cream. Melt 4 tablespoons of butter, add the apple mixture and cook for about 8 minutes before putting into the pie shell.
To make the topping, combine 1/2 cup of flour and 3 tablespoons of sugar, and then mix in 1 tablespoon of butter until the mixture turns into crumbs. Stir in 2 crushed toffee bars, sprinkle over the pie, and then top it with the rest of the pie shell. Vent the top, brush with egg and sprinkle with sugar. Bake for 15 minutes before reducing the heat to 350 F and baking for 45 minutes longer.
