Some good campfire recipes include campfire foil packs and campfire breakfast sandwiches. To make the foil packs, cube 1 pound of boneless skinless chicken breast meat, dice 2 onions, and seed and slice 1 yellow bell pepper and 1 red bell pepper into strips.
Slice 4 cloves of garlic, cube 4 small potatoes, and transfer all of the ingredients to a mixing bowl or large plastic bag with 1 8-ounce package of sliced mushrooms. Add 1/4 cup of olive oil and the juice of 1 lemon, and toss the ingredients to coat.
Portion out the meat and vegetables onto 4 sheets of aluminum foil, and then layer another sheet of foil on top. Roll the edges tightly, and then wrap the foil packet in another layer of foil. Place the packets directly onto the campfire, and cook them until the chicken is cooked through, which should take approximately 40 minutes.
To make a campfire breakfast sandwich, preheat a cast-iron sandwich toaster in the coals for a few minutes. Butter 2 slices of bread with 2 tablespoons of butter. Place one slice of bread butter-side down onto the toaster, and crack 1 egg over it. Pierce the yoke. Add 1 slice of cheddar cheese, and top it with the other slice of bread, butter-side up.
Close the sandwich toaster, and return it to the fire. Turn it frequently to cook both sides, and remove it after several minutes when the bread is toasted on both sides.
