Heat 1 tablespoon of vegetable oil in the same pot over medium heat. Add 1 cup of chopped onion and 1 cup of chopped green bell pepper. Sauté the vegetables for about seven minutes to make them tender. Add three cloves of chopped garlic, 1 teaspoon of dried thyme and one bay leaf, stirring for one minute.

Add three low-fat turkey sausages with the casings removed. Sauté the sausages until brown, breaking the sausages up with the back of a spoon. Then, add the browned flour. Add one 28-ounce can of diced tomatoes with juices, along with 1 cup of canned low-salt chicken broth or vegetable broth. Add 2 tablespoons of Creole or Cajun seasoning. Bring the mixture to a boil, reduce the heat, cover the pot and let the food simmer for 20 minutes, stirring frequently. Finally, add eight large, peeled, uncooked de-veined shrimp to the pot, along with two 6-ounce catfish fillets that have been cut into four pieces each. Simmer the dish for about five minutes, and serve seasoned with salt and pepper.
