One good finger food recipe for buffets is ensalata caprese skewers. To make them, combine 1/4 cup extra virgin olive oil, 1 1/2 teaspoons red wine vinegar, 1/2 teaspoon salt and freshly ground black pepper to taste. Add 2/3 cup chopped basil, then gently mix in 2 pints cherry tomatoes and 1 pound bite-size fresh mozzarella chunks. Cover, and refrigerate for no more than two hours, then make skewers with the tomatoes, mozzarella and fresh basil.
Another popular and easy recipe is bacon-wrapped dates. Preheat the oven to 400 degrees, and soak several toothpicks in water for 15 minutes. Slice a small opening in each date, and place an almond inside, then wrap in bacon and skewer with a toothpick. Bake for 10 to 15 minutes or until crispy.
For a heartier choice, make mini egg quiches. Preheat the oven to 350 degrees, spray two mini-muffin trays with cooking spray, and beat 3 eggs in a bowl. Mix 2 cups of shredded cheese, 6 slices of cooked bacon crumbles, 1 chopped onion, 3/4 cup of baking mix and 1 1/2 teaspoons of chopped parsley with the eggs. Pour the mixture into the muffin cups, and bake until the tops are light brown. These quiches work well with many different ingredients, such as diced ham or peppers.
