Boil approximately 2 pounds of fresh broccoli florets in salted water until it is tender. Drain it, and place a layer in a lightly greased 9x13-inch baking dish. For easier cleanup, line the baking dish with foil before greasing it.
In a large bowl, beat 2 eggs, and add 1 chopped onion, a 10 1/2 ounce can of cream of mushroom soup and 1/2 cup of mayonnaise. Mix the ingredients to create the mayonnaise sauce.
Pour the sauce over the broccoli. Spread a 10-ounce bag of Brownberry stuffing over the top of the casserole. Pour 1/2 cup of melted butter over the stuffing and top with 1 cup of shredded cheddar cheese.
Cover the baking dish with foil to keep the ingredients moist while they bake. Place it in a preheated oven at 350 degrees Fahrenheit and bake it for 30 minutes. Serve the casserole while it is hot. This meat-free stuffing casserole is a good addition to meals featuring poultry or pork as the main dish.Learn more about Cooking
