Two good breakfast egg muffin recipes are Scrambled Egg Muffins and Breakfast Egg Muffins. You need sausage or ham, eggs, onion, bell peppers and cheese along with seasonings to taste.
Make Scrambled Egg Muffins by whisking together 12 eggs and then mixing in 1/2 cup of chopped onion, 1/2 cup of chopped green bell pepper, 1/2 teaspoon of salt, 1/4 teaspoon of pepper and 1/4 teaspoon of garlic powder. Cook 1/2 pound of pork sausage in a skillet until it browns and then drain the grease. Stir 1/2 cup of shredded Cheddar cheese and the sausage into the egg mixture. Spoon the mixture into a greased muffin tin and bake it at 350 degrees Fahrenheit for 20 to 25 minutes.
To make Breakfast Egg Muffins, add nine eggs and 4 cups of egg whites in a bowl and beat them until they are well-combined. Stir in 1 pound of diced turkey ham, 2 cups of chopped spinach, two diced red bell peppers, two diced green bell peppers and two seeded and diced jalapeño peppers. Season the mixture with 1 tablespoon of minced garlic, 1 tablespoon of Italian seasoning, 2 teaspoons of onion powder, 1/4 teaspoon of cayenne pepper and salt and black pepper to taste. Spoon the mixture into 24 greased muffin cups and bake at 375 degrees Fahrenheit for 25 to 30 minutes.
