To prepare a good chuck steak recipe, first gather the following ingredients: 4 minced garlic cloves, 1/4 cup of olive oil, 1 cup of red wine vinegar, 2/3 cup of ketchup and 2 tablespoons of Worcestershire sauce. Also gather 2 teaspoons of sugar, 2 teaspoons of dried basil and a boneless beef chuck steak, which should weigh 3 to 4 pounds. The recipe takes approximately an hour to complete.
Begin by sauteing the garlic in a small saucepan with oil for approximately four minutes or until the garlic is tender. Remove the pan from the heat, and combine the ketchup, vinegar, Worcestershire sauce and dry ingredients. Pour 1 cup of the marinade into a resealable plastic bag, and add the meat to marinate overnight or for at least six hours. Seal the bag tight, and be sure to cover and refrigerate the remaining marinade.
Once ready, discard the marinade, and prepare the grill for indirect heat with a drip pan. Lightly coat the grill rack with oil, and begin grilling the steak. Cook it uncovered over medium heat until it is browned on each side, and then move the steak to the indirect heat side of the grill. Cook it covered for 50 minutes or until it has reached the desired temperature.
