Black Forest ham makes an excellent grilled ham and cheese sandwich. This recipe uses sweet caramelized onions and creamy Cambozola cheese with rye bread. Cambozola cheese is a German blue cheese found in many specialty cheese shops and can be substituted for Gorgonzola. The caramelized onions are best made in advance.
To make the caramelized onions, take two medium yellow onions and slice them into very thin strips. Melt 2 tablespoons of unsalted butter in a frying pan over medium-low heat. Add the onions and stir them occasionally, allowing them to cook for 45 minutes. They will turn a deep golden-brown color. Add salt and pepper to season and allow them to cool before using or serving.
To make the sandwich, spread softened unsalted butter evenly across the surface of two slices of light rye bread that are cut 1/2-inch thick and 7 1/2-inches long. Take a large frying pan and set it over medium-high heat. Melt 1 tablespoon of unsalted butter in the pan. When the pan is warm and the butter melted, place one slice of bread, buttered side down, and cover it with 2 ounces of cheese. Add 2 tablespoons of caramelized onions and 2 ounces of thin-sliced Black Forest ham. Top it off with the other slice of bread, buttered side up. Cook for four to five minutes on each side, until the bread is toasted and the cheese is melted.
