To make authentic Belgian waffle batter, combine 2 cups of flour, 3/4 cup of sugar and 3 1/2 teaspoons of baking powder. In another bowl, whisk 2 egg yolks and add 1 1/2 cups of milk, 1 cup of melted butter and 1 teaspoon of vanilla, mixing well. Stir the wet ingredients into the dry until combined. Then, whisk 2 egg whites until stiff peaks form and fold into the batter.
To make buttermilk Belgian waffle batter, combine 1 3/4 cups of flour, 1 teaspoon of baking powder, 1 teaspoon of baking soda and 1/2 teaspoon of salt. In a separate bowl, whisk 2 eggs, 2 cups of buttermilk and 1/3 cup of canola oil. Pour the wet mixture into the dry ingredients and stir until combined.
To make chocolate Belgian waffle batter, melt 4 ounces of chocolate with 2 tablespoons of butter in a microwave. Then, mix 1 cup of flour with 1/4 cup of sugar, 2 teaspoons of baking powder and 1/4 teaspoon of salt. Add in 3/4 cup of milk, 1/2 cup of sour cream, 2 beaten eggs and 1 teaspoon of vanilla and mix. Add the chocolate mixture and stir.
To make gluten-free Belgian waffle batter, combine 1 1/3 cups of gluten-free mix with 1 1/4 cups of milk, 3 tablespoons of oil and 1 egg.
