To make beef stroganoff, heat 1/4 cup of olive oil in a large braising pan. Place the tenderloin tips, 1/4 cup of shallots and 1 tablespoon of minced garlic in the oil. Cook until the beef tips are browned. Add 1 cup of sliced wild mushrooms, 1/2 cup of green onions and 1/2 cup of wine. Season with salt and pepper.
Cook for roughly 20 minutes until the sauce is reduced by half. Mix 1 cup of demi glaze with 1/2 cup of sour cream and 2 tablespoons of Dijon mustard. Add to the tenderloin tips, simmer until the mixture thickens and pour over cooled noodles.

Meanwhile, heat 1 tablespoon of vegetable oil in a large skillet. Add 8 ounces of sliced mushrooms, frying until lightly browned. Pour the beef mixture into the skillet, cooking until browned.
