Some good bean pie recipes are pinto bean pie, bean pie with navy beans and Great Northern bean pie. These recipes also contain butter, sugar, eggs and spices for a sweet flavor.
Make pinto bean pie by mashing 1/2 cup of rinsed and drained pinto beans. Blend the beans with 1/3 cup of melted butter and 1 teaspoon of vanilla. Add in 1 1/4 cups of sugar and 1/2 cup of flaked coconut. Beat in 2 eggs until the batter is thoroughly combined, then pour the filling into a pie crust. Bake for 30 minutes at 350 degrees Fahrenheit before topping with 1/2 cup of chopped pecans and cooking for another 15 to 20 minutes.
Make a bean pie with a Great Northern bean base by beating together two 15-ounce cans of drained beans, 3 large eggs, 1 1/4 cups of sugar, 1/4 cup of melted unsalted butter and 1 teaspoon of vanilla extract. Mix in 1 teaspoon of ground cinnamon, 1 teaspoon of ground nutmeg and 1/4 teaspoon ground allspice. Separately whisk 1 teaspoon of baking powder into 1/3 cup of evaporated milk until well-blended, then add it to the bean filling. Before pouring the filling into a pie crust, bake it first, and allow it to cool. Add the filling and bake for another 50 minutes at 350 degrees Fahrenheit.
