For fish batter, take 2 large eggs, 1 1/2 teaspoons of salt, 1/2 teaspoon of black pepper, 1 cup of beer, 1 cup of all-purpose flour and, optionally, a pinch of cayenne. A large, heavy skillet or cast iron frying pan and vegetable oil are needed for frying.
Begin to heat the oil in the skillet while you whisk the eggs. Add the beer, 1/2 a teaspoon of the salt and a 1/4 teaspoon of the black pepper. In a separate bowl, mix the flour and remaining dry ingredients together and add to the beer mixture. Stir the two mixtures together until well combined and let it sit for 15 minutes before you dip your fish in the batter and fry it.
