To make an easy baked haddock, combine 1 tablespoon of fresh lime juice with 1 tablespoon of light mayonnaise, 1/8 teaspoon of onion powder and 1/8 teaspoon of black pepper. Spread the mixture over 1 1/2 pounds of haddock fillets, and evenly sprinkle the fish with breadcrumbs.
Melt 1 1/2 tablespoons of butter in a small saucepan, drizzle it over the fish, and bake the haddock for 20 minutes at 425 degrees Fahrenheit. Serve the fish topped with a sprinkle of fresh parsley.
To make oven-fried haddock, dredge haddock fillets in milk, and seasoned bread crumbs mixed with finely grated Parmesan and dried thyme. Place the coated fillets in a greased baking dish, and drizzle the fish with 1/4 cup of melted butter. Arrange the oven rack in the highest position, and bake the fish for 12 to 15 minutes at 500 degrees Fahrenheit.
Alternatively, make baked crab-topped haddock by baking the haddock fillets in a greased baking dish for 18 to 22 minutes at 350 degrees Fahrenheit. While the fish bakes, combine 6 ounces of crab meat with 1/2 cup Parmesan cheese, 1/2 cup mayonnaise and 1 teaspoon of lemon juice. Spoon the crab evenly over the haddock fillets, and place the fish under the broiler about 4 inches from the heat source for five minutes to brown the crab topping.
