FoodNetwork.com has a recipe oven-roasted cod crusted with herbs, and WholeFoodsMarket.com has a recipe for baked breaded cod. Both recipes require minimal preparation and cooking time.
The Food Network recipe requires 1 1/2 cups plain bread crumbs, 1 handful of fresh parsley, 2 large cloves of garlic, one lemon and salt. Put the bread crumbs in a shallow dish. Finely chop the parsley, garlic, lemon zest and salt. Combine the chopped ingredients with the bread crumbs.
Brush the tops of 4 cod fillets with olive oil. Dip one side of each cod fillet into the bread crumbs and seasoning mixture. Brush olive oil on the bottom of a baking pan. Place each cod fillet in the pan with the crusted side up. Roast the fillets in an oven at 400 F for about 12 to 15 minutes.
The Whole Foods Market recipe requires 3 tablespoons melted butter, the juice of one lemon, and chopped parsley and chives. Grease a baking dish with oil. Combine 1/4 cup of bread crumbs, 3 tablespoons of chopped parsley and 2 tablespoons of chives in a small bowl. Sprinkle salt and pepper over the cod fillets. Drizzle 1/2 of the butter and lemon juice over the fillets.
Sprinkle the bread crumb mixture over the cod fillets. Drizzle the remaining butter and lemon over the bread crumb mixture. Bake the cod fillets at 425 F for approximately 12 minutes.
