A good baked chicken recipe is baked lemon chicken from the Food Network. The chicken is baked in broth, lemon, honey, onion and spices. Basting it as it cooks helps to create a crispy outer layer.
To make baked lemon chicken, cut a 3 1/2 to 4 pound chicken into 8 pieces. Pat the pieces dry, and season them with kosher salt and freshly ground black pepper. Heat 3 tablespoons of olive oil in a large skillet over medium-low heat, and add the chicken pieces, skin side down. Sauté them for approximately five minutes on each side or until they are golden brown. Remove the chicken from the skillet, and set it aside.
Pour out the oil, and use a paper towel to wipe the skillet clean. Add 1 tablespoon of oil, and heat over medium-low. Add one large, thinly sliced onion, and cook for 10 to 12 minutes. Add the zest from half of a lemon, 2 large minced garlic cloves and 1 1/2 teaspoons of fresh rosemary leaves, and cook for 2 minutes. Add 1 tablespoon of honey, 1/4 cup of lemon juice and 1 cup of chicken broth. Bring to a simmer.
Use a slotted spoon to remove the onions and place them in a 9 x 13 inch baking dish. Place the chicken in the dish, skin side up, and pour the cooking liquid over it. Season the dish to taste, and bake it at 400 degrees Fahrenheit for 45 minutes, basting every 15 minutes.
