Food Network and Betty Crocker both provide good baked artichoke spinach dip recipes. Both recipes require minimal preparation time and cook in about 30 minutes.
The Food Network recipe includes a 10-ounce package frozen chopped spinach, 2 13-ounce cans of artichoke hearts, 1/2 cup of mayonnaise, 1/2 cup of sour cream, 1 cup of freshly grated Parmesan and 1 cup of grated pepper jack cheese. Preheat an oven to 350 degrees F. Spray a casserole dish with nonstick cooking spray.
Combine all the ingredients except the pepper jack cheese. Put the ingredients into the casserole dish. Sprinkle the pepper jack cheese on top. Bake the dish for 30 minutes, and serve the dish with bagel chips or sliced baguette while the dip is warm.
The Betty Crocker recipe includes 1 cup of mayonnaise or salad dressing, 1 cup of freshly grated Parmesan cheese, a 14-ounce can of drained and chopped artichoke and 1/2 cup of chopped red bell pepper. Also add a 9-ounce box of frozen, chopped spinach that is thawed and drained. Combine the ingredients.
Preheat an oven to 350 degrees F. Pour the ingredients into a 1-quart casserole dish. Sprinkle 1/2 cup of Monterey Jack or mozzarella cheese on top. Bake the dish for approximately 20 minutes or until the cheese is melted. Serve the dish warm with baguette slices or crackers.
