Some good authentic Italian pizza recipes are Authentic Pizza Margherita, Pizza Marinara and La Napoletana. The dough for the Authentic Pizza Margherita recipe requires 3 3/4 cups of flour, 1 teaspoon of salt, 1 cup of water, 1 package of active dry yeast and 1 pinch of sugar.
Mix together 3 1/2 cups of the flour and the salt together in a large bowl. In a separate bowl combine the water, sugar and the package of yeast. Let the mixture sit for about 5 minutes until the yeast begins to form a creamy residue on top of the water. Add half of the flour and salt mixture to the water, and stir the ingredients together to combine them. Slowly add the rest of the flour mixture to the bowl 1/2 cup at a time.
Once all of the flour has been incorporated, transfer the dough from the bowl to a lightly flour-dusted cutting board. Knead the dough for 8 minutes, or until it becomes smooth and elastic. Place the dough a large bowl, cover it and let it rise for about 1 hour. Divide the dough into four portions.
Preheat an oven to 500 degrees Fahrenheit. Spread out one of the dough balls onto a pizza pan. Pour 1/2 cup of tomato sauce onto the pizza. Place five slices of mozzarella cheese, five leaves of basil, 1 tablespoon of olive oil and salt onto the pizza. Bake it for 5 to 6 minutes.
