Make Asian noodle salads with rice noodles, linguine or soba noodles combined with a variety of chopped vegetables. Prepare cold soba noodle salad by tossing together 1 package cooked soba noodles, 1 sliced carrot, 2 diced celery stalks, 5 diced green onions and 1/2 cup sliced Napa cabbage. Toss in 1 teaspoon sesame oil, 2 tablespoons rice wine vinegar, 3 tablespoons soy sauce, 1 teaspoon hot chili oil, 1 tablespoon hoisin and 5 tablespoons extra-virgin olive oil.
Make a crunchy Asian noodle salad by tossing together 1 package cooked linguine, 1/2 head sliced Napa cabbage, 1/2 head sliced purple cabbage, 1/2 bag spinach and 1 sliced red bell pepper in a large salad bowl. Toss in 1 cup sliced yellow bell pepper, 1 cup sliced orange bell pepper, 1 bag bean sprouts, chopped cilantro and 3 sliced cucumbers. Mix well and toss in 10 toasted cashews and 3 sliced scallions. Set aside and make the dressing.
Whisk the juice of a lime with 8 tablespoons olive oil, 8 tablespoons soy sauce, 2 tablespoons sesame oil, 1/3 cup brown sugar and 3 tablespoons chopped fresh ginger. Stir in 2 chopped garlic cloves and 2 chopped jalapeño peppers. Pour the dressing into the salad and toss to combine. Serve immediately.
