Martha Stewart publishes a simple recipe for apple salad with yogurt on MarthaStewart.com, and Food Network offers a delicious apple raisin coleslaw recipe. Another option is the more traditional Waldorf-style apple salad with pecans and raisins published by Southern Food.
Martha Stewart's apple raisin salad with yogurt has only four ingredients: 1/4 plain yogurt, 1 teaspoon fresh lemon juice, 2 sliced apples and 1/4 cup of raisins. To make the salad, mix the yogurt with the lemon juice and toss with the apples and raisins. For a sweeter option, use vanilla yogurt, or add honey.
To make apple raisin coleslaw for eight to 10 people, combine 1/2 cup golden raisins, 1/2 teaspoon celery seeds, 1 cup mayonnaise, 1/2 cup sour cream and 2 tablespoons apple cider in a large bowl. Add 1 head shredded savoy cabbage, 1 cup shredded carrots and 2 shredded Granny Smith apples. Season with salt and pepper to taste, and refrigerate for one hour.
For a more traditional take on the apple raisin salad, combine 5 chopped red delicious apples, 1/2 cup sliced celery, 1/2 cup chopped pecans, 1/2 cup raisins, 1/3 to 1/2 cup of mayonnaise, and the juice of 1 lemon. Stir the mixture well, and serve on lettuce leaves if desired.
