To make a good appetizer using Triscuits, spread 12 Triscuit balsamic vinegar and basil crackers with 1/3 cup of basil pesto, and top each cracker with 1 square of mozzarella cheese, 1 slice of a Roma tomato and a mozzarella ball. Drizzle each portion with a small amount of pesto, and secure the appetizers with a toothpick to serve.
Alternatively, make ham and Swiss melts using Triscuits. Cut 3 reduced-fat Swiss cheese slices diagonally in half, and arrange 24 Triscuit crackers in a single layer on a baking sheet. Top the crackers with 6 slices of smoked ham and the cheese pieces. Bake the crackers for four to five minutes at 350 degrees Fahrenheit, and top them with 3 tablespoons of peach preserves and 1 green onion.
Another option is to make strawberry-balsamic appetizers using Triscuit crackers. Place a teaspoon of softened cream cheese on 12 Triscuit cracked pepper and olive oil crackers. If using unflavored Triscuit crackers, mix a small amount of olive oil and a lot of cracked black pepper into the cream cheese. After adding the cream cheese, top each cracker with a strawberry half, making sure that the strawberries are very ripe and sweet. Drizzle each portion with 1 or 2 drops of balsamic vinegar.
