Some good almond paste cookie recipes are pignoli cookies, a traditional Italian treat, and almond cloud cookies. Martha Stewart's almond macaroon recipe is an easy-to-make option.
Make pignoli cookies by beating 1 15-ounce can of almond paste until it is finely crumbled. Mix in 1 cup of confectioners' sugar, 2 tablespoons of honey and 2 egg whites. Add the zest from 1 lemon, 1 pinch of ground cinnamon and 1 pinch of salt. Once the dough is well-blended, spoon it into a pastry bag, and pipe out dough balls. Top the cookies with 1/2 to 3/4 cup of pine nuts, and cook at 350 degrees Fahrenheit for 12 to 14 minutes.
Cloud cookies requires only 10 ounces of almond paste combined with 1 cup of sugar and 1/4 teaspoon of salt. Once the dough turns crumbly, beat in 2 egg whites, 1/4 teaspoon of almond extract and 1/8 teaspoon of bitter almond oil. Spoon onto a baking sheet, sprinkle with confectioners' sugar, and cook at 325 degrees Fahrenheit for 20 to 25 minutes.
To make almond macaroons, beat together 4 ounces of almond paste, 1/2 cup of confectioners' sugar, 1 pinch of salt, 1 egg white and 1/4 teaspoon of pure vanilla extract. Place dough in balls on a cookie sheet, and top with 1/4 cup of sliced almonds. Bake the cookies at 300 degrees Fahrenheit for 20 to 25 minutes.
