To make gluten-free Filipino lumpia, whisk 6 eggs, 3 cups of water or milk and 2 tablespoons of oil or butter in a large bowl. Stir in 1 cup of gluten-free flour until the batter is smooth. Pour 1/4 cup of the batter into a pan, forming a thin layer that covers the bottom. Cook the batter for one or two minutes until the edges start to turn brown. Flip the thin roll, and cook the other side for 10 to 20 seconds.
Make the filling for the lumpia bread rolls by mixing 1 pound of ground pork, 1 teaspoon of vegetable oil, 2 cloves of crushed garlic, 1/2 cup of minced onions and 1/2 cup of minced carrots.
