Ricotta cheese can also enhance savory foods. To make a cheesy noodle bake, cook 1 pound of ziti noodles until al dente, drain, and set aside. Meanwhile, brown 1 pound of turkey sausage, casings removed, and 1 chopped onion in a large skillet, breaking the sausage into smaller pieces as it cooks. Add a 28-ounce can of chopped tomatoes, 1 cup of pesto, garlic flakes, salt, pepper and Italian seasonings to taste. Simmer 12 minutes, add 9 ounces of baby spinach, and cook for 2 additional minutes.
As the skillet mixture finishes cooking, mix a 15-ounce container of ricotta cheese, 1 1/2 cups of mozzarella cheese and 1 1/4 cups of Parmesan cheese. Pour the cooked noodles into a lightly oiled 9 by 13-inch baking pan, spoon the ricotta mixture over the noodles, and spread the tomato sauce over the top. Sprinkle 1/2 cup of shredded mozzarella and 1/4 cup of grated Parmesan over the top, and bake at 375 degrees Fahrenheit for 20 minutes or until the top is golden brown.
