Some recipes suitable for catering a Hawaiian luau include Macadamia Nut Cream Pie (for eight servings) and Pineapple Drops (for six cocktails). The latter of these was specifically selected by the Polynesian Cultural Center for an authentic luau menu.
To make Macadamia Nut Cream Pie, combine a cup of milk with sugar and chopped macadamia nuts, salt and vanilla extract to scald in a saucepan. Combine another third of a cup of milk with an egg and cornstarch, then add some of the hot milk mixture to thoroughly combine. Return all to the saucepan and cook for 5 minutes, stirring continuously until thickened. Cool for an hour, then fold in beaten egg whites before pouring into a pie shell to chill in the refrigerator. Top with sweetened whipped cream and additional chopped macadamia nuts to serve.
For Pineapple Drops, combine 1-1/2 half cups of pineapple juice with the same amount of vodka and 3 tablespoons of lime juice. Set aside in the refrigerator until fully chilled. To serve, rub lime wedges around the rims of martini glasses and dip in a plate of sugar. Pour the vodka and pineapple mixture into the glasses and garnish with chunks of pineapple on cocktail sticks.
