The first step to making Paula Deen's country-style fried cabbage is to wash and shred one small head of green cabbage. To shred the cabbage, cut it into quarters, and remove the core. Use a sharp knife to make thin slices of each quarter.
Next, heat 3 tablespoons bacon fat in a Dutch oven. Add the shredded cabbage, and stir it to coat with the melted fat. Lower the heat, and add 2 teaspoons red pepper flakes, salt and pepper to taste. Cook the cabbage for 15 minutes or until it's tender, stirring to turn the slices.
A Deep South recipe for fried cabbage calls for more ingredients. First, chop three slices of bacon, and cook in a shallow pot until the fat renders. Add 2 tablespoons of butter and 1 cup chopped onion. Sauté for four minutes. Deglaze the bottom of the pan with a splash of water, and scrape the brown bits.
Add shredded cabbage to the pot, and season with salt, pepper and 1/4 teaspoon Cajun seasoning. Add 2 teaspoons apple cider vinegar and a dash of red pepper flakes if desired. Cook until tender. If cooking a medium or large cabbage, cook it in two batches, adding more butter as necessary.Learn more about Vegetables
