The herbs needed to make an Italian seasoning blend are basil, oregano, parsley, thyme and rosemary. Other ingredients include garlic powder, pepper and crushed red pepper. Fresh herbs can be dried by air, oven or dehydrator.
To make an Italian seasoning blend, combine 3 tablespoons each of basil, oregano and parsley with 1 teaspoon each of dried thyme and dried crushed rosemary. Add 1 tablespoon of garlic powder and 1/4 teaspoon each of pepper and crushed red pepper. Combine ingredients and crush using a spice grinder or the back of a spoon until it becomes a coarse powder.
To air-dry fresh herbs, gather five to ten branches, tie them together, place the bundle stem side up in a paper bag and tie the end. Create small holes in the bag for ventilation and hang by the stem in a warm, ventilated room. Herbs typically dry in one week.
