Bring 1 gallon of water to a boil. Put up to 1 pound of the same sized peas into the boiling water. Blanch small peas for 60 to 90 seconds and medium peas for 2 minutes.
Immediately place the peas into ice water until chilled. Drain peas in a single layer on a towel.
Place a single layer of the peas onto a tray, and place them in the freezer until frozen solid. Put the frozen peas into a moisture-proof container, and return to the freezer.
