Combine 6 cups of water with 2 cups of sugar in a stock pot over medium heat. Stir the sugar with a wire whisk until the sugar dissolves. Let the syrup cool.
Wash the apricots under cold water. Fill another stock pot with water and bring to a rolling boil. Place apricots in the water with a slotted spoon for 45 seconds. Remove the apricots from the boiling water and allow them to cool. Use a paring knife to remove the skin from the apricots. Slice apricots into quarters or wedges.
In a large bowl, mix the sliced apricots with the simple syrup and 2 tablespoons of lemon juice or citric acid and vitamin C. Stir to coat.
Spoon apricots and mixture into freezer bags, remove any extra air from the bags and place in a single layer on the freezer drawer or shelf.
