Jicama slaw is a simple and refreshing side that goes well with tacos. Combine 1 peeled and shredded jicama with 1/2 of a shredded napa cabbage and 2 shredded carrots. Add 1/2 cup of lime juice, 2 tablespoons rice vinegar, 2 tablespoons ancho chili powder, 2 tablespoons honey and 1/2 cup of canola oil. Season with salt and pepper to taste, and add 1/4 cup chopped cilantro.
Another easy side is an avocado salad. Start with 2 large avocados cut into 1-inch chunks. Combine with 4 large tomatoes cut into 1-inch chunks, 2 cups of arugula leaves, 1 sliced red onion, 1 teaspoon cumin and 1/4 cup chopped cilantro.
Top with a cumin vinaigrette by mixing 1/4 cup lime juice, 2 tablespoons rice wine vinegar, 1 tablespoon honey, 1 tablespoon toasted cumin seeds, 1/4 cup chopped cilantro, 1/4 cup olive oil, 1/4 cup canola oil, and salt and pepper to taste.
